Why go to Bearfoot Bistro
Bearfoot Bistro, 54th on Canada's 100 Best Restaurants in 2023, turns dinner in Whistler Village into a bit of theatre. Below the dining room sits an underground cellar of more than 15,000 bottles, which the restaurant calls the largest collection in Western Canada, where guests can learn to saber a bottle of Champagne and take the cork home in a presentation box. Upstairs, the Grey Goose Ice Room pours flights of sub-zero vodka, and the Champagne Lounge keeps glasses chilled on a rail of ice along its pewter bar, with an oyster shucker on hand for après-ski and a patio bar in summer.
The kitchen starts with the season, pairing British Columbia seafood and wild game with luxuries such as Wagyu beef, Périgord truffles and Berkshire pork. A wine director handles pairings, pastry chef Scott Penfold finishes with petits fours or nitro ice cream made tableside, and up to 16 guests can book the chef's table for a five-course tasting menu in the heart of the kitchen.
