Big Head Wines on Line 6 Road in Niagara-on-the-Lake makes small-batch wines using wild fermentation, the appassimento method and a range of aging vessels. The winery says it grew from an online presence into its own estate, and it draws on more than 20 years of winemaking experience.

Its range includes the RAW series and the Lipinski Family Wines collection, among them Olusia, a traditional method sparkling wine started with the 2013 vintage. Seated flights of five wines cost $30 per person, and a three-wine standing flight at the bar is $20.
