Folke

Folke is the plant-based Kitsilano restaurant from friends Colin Uyeda and Pricilla Deo, and the MICHELIN Guide, which recommends it, describes a small but sophisticated room: a wall of wine at the entrance, deep blue walls hung with original seaweed pressings and dried grasses, and a fully open kitchen. Ranked seventh on Air Canada enRoute's Canada's Best New Restaurants in 2023, it makes everything vegan and in house, from breads and ferments to desserts, and the restaurant runs on a no-tipping model.

Dinner is shared plates or a chef's choice tasting menu, built around what British Columbia's farms, forests and coastline are offering, with weekend brunch as well. MICHELIN told diners not to skip the bread with sesame-sprinkled kale "butter" and praised tender, crunchy cabbage in a smoky, tangy potato mole, paired with natural wines, local ciders or non-alcoholic drinks.
