Sushi Bar Shu

Marpole, Vancouver

Chef Hyunki Shin's reservation-only omakase sushi bar in Marpole

Why go to Sushi Bar Shu

Sushi Bar Shu opened in 2018 on Granville Street near West 65th Avenue in Marpole, in a converted Bean Around the World café, as Vancouver Magazine noted. Chef Hyunki Shin, who the restaurant says trained for 18 years under notable chefs in Vancouver and Japan, leads a chef-guided omakase built on seasonality. Guests sit at the counter, where every seat orders an omakase and, as Daily Hive put it, gets a front-row view of the preparation. Reservations are required.

Dinner comes as two courses: the Sakura, with sunomono, an appetizer, eight nigiri, a maki, a handroll and tamagoyaki, and the longer Matsu, with a chef's choice sashimi tasting, three appetizers, miso soup, eleven nigiri, atsuyaki tamago, a negitoro handroll and dessert. Weekend lunch brings eight nigiri, a maki, a mini rice bowl and mini udon, and add-ons include A5 Miyazaki wagyu, bafun uni and caviar. Vancouver Magazine food editor Neal McLennan chose it in the magazine's best sushi roundup, writing that everything is so fresh he wondered how they could be making much profit.
